Lots to be thankful for!


I love this picture of the six of us! We had such a great thanksgiving this year and had so much to be thankful for, especially our growing girl! My mom has hosted Thanksgiving dinner for as long as I can remember. She is such a great cook and makes it all look so easy - even when cooking a 22lb turkey!


I made this pecan pie for dessert and used these cute pie crust cutters from William Sonoma to make the crust.




 

Now on to Christmas planning! I can't believe how fast this year flew by!

Date Night, Nesting and Eggplants!

 Heading out to dinner to celebrate 24 weeks!

My poor husband - LOL - I have been making him rearrange furniture, rip out landscaping, scrub the outside of our house and move rugs for the past few weeks. I thought I was going crazy until it dawned on me that I am nesting!

In other news, our baby girl is the size of an eggplant this week. An eggplant is pretty big! I'm still feeling great, although I have noticed that it is getting harder for me to do things that involve bending over.

I had a routine checkup last Thursday and everything is on track. While Andy and I were sitting in the waiting room, we were laughing because I could see my stomach moving around. When the nurse went to find her heartbeat on the doppler she couldn't find it on my right side. I told her she was jumping around over on my left side and once she moved the doppler over, she found it immediately!

Next up... the dreaded glucose test!

Our baby girl has a name!

Here she is at 22 weeks. She has been kicking away, and guess what...she was in ANOTHER earthquake! While I was in Dallas this past week for work, there was a 5.6 magnitude earthquake in Oklahoma City that could be felt all the way through north Texas. I thought I was going crazy when I felt my hotel room shake, but in the morning when I turned on the news I realized that it was, in fact, an earthquake!

This week she is as big as a papaya and weighs 1.2 pounds.

21 Weeks!


"At about seven inches in length and almost 11 ounces in weight, your baby is about the size of a large banana.
 
By 21 weeks pregnant, your baby swallows at least several ounces of amniotic fluid each day —  not only for hydration and nutrition, but also to practice swallowing and digesting — skills your baby will need as soon as she arrives in your arms. And that smorgasbord of tastes won't be lost on your baby. That's because your little one has very developed taste buds already. In fact, researchers have noted that babies who were exposed to certain tastes in utero via the amniotic fluid were more eager to eat foods with that same taste after birth. Your developing baby still has a great deal of room in your womb — though like anyone who lives in one space for a long time, this tenant will soon begin to feel cramped. Until those uterine walls start closing in, however, there's plenty of space for twisting, turning, and even an occasional somersault (so that's what you were feeling last night!). 

With all that belly dancing going on, it's hard to believe your baby gets any sleep at all. But believe it or not, your fetus sleeps as much as a newborn, perhaps 12 to 14 hours per day! (Now if only you could get some sleep!)"

Halfway There!

It's pretty hard to believe that I have reached the halfway point in my pregnancy! Time is flying by now and I am getting so excited! Although I have been feeling movement for about three weeks now, I really only started feeling her kick about a week ago. I read that when you are up walking around during the day that your movement actually rocks them to sleep, so I notice that when I am lying still on the couch or in bed, that is when I feel her the most. She was kicking pretty hard the other morning and I tried to get Andy to feel, but I think it is still a little too early for that. I was able to have him feel how she was hanging out on my right side the other day though. There was a noticeable hard lump there that he was able to feel!


I had a routine prenatal checkup today (20 weeks 3 days) and everything looked and sounded great according to the doctor. My doctor told me that I win the award for the cutest pregnant person and then she bent down to my stomach and said "Your mommy is so fashionable!" 

So far, I have gained 16 pounds, which I am pretty happy about! I was totally expecting it to be more when I got weighed today. Hopefully I am on track to only gain about 30-35 pounds total. We'll see if it stays that way! I have tried to stay pretty active by walking in the mornings before work and on the weekends, but it is so hard to stay on a schedule when I get really busy with work.

 This is a picture from my ultrasound last Friday. She had the hiccups which was so funny to watch on the screen!

I haven't had any crazy cravings yet, but I have been obsessed with Kilwins' Banana Fudge Pie ice cream lately. Everything in moderation, right?

The weather was so beautiful here in Florida this past weekend. It was in the 60s and 70s which is such a nice break from the 90 degree weather we've had all summer. We took advantage of our "cool front" as much as we could and spent a lot of time outside. On Saturday, we all went down to the Miami vs. Georgia Tech football game and were thrilled to have beat the Yellow Jackets 24-7!

Strolling in Style





I found the perfect stroller today - the Bumbleride Flyer! I am so excited because it has every feature that we wanted - reversible handle, lightweight frame (the whole stroller weighs only 19 lbs), one-handed steering, infant seat compatible, huge canopy, easy to open and close, you name it!

I am pretty set on the black, but I really love the red too! It would be too good to be true if it came with an extra seat cover so that you could switch back and forth whenever you want.

I can't wait to get it!

17 Weeks!

 "At five and a half inches long and five ounces in weight, she now may be large enough for you to feel her twisting, rolling, kicking, and punching her way around the womb. Plus, she's developing yawning and hiccupping skills (you may feel those soon, too!) and her own unique set of toe and fingerprints."

Wow - time is flying! I have been feeling really great lately and am enjoying every minute of being pregnant. I have started to feel a lot more movement over the past week and am looking forward to the day when Andy can feel her too! It sounds so crazy to actually be able to say "her" now!

My time has been pretty consumed lately with daydreams of our future nursery. I can't wait to get started on it! Our goal is to have everything finished by the beginning of December, because once the holidays are here, we will have no time! My work schedule is very hectic in January and February and I think it will be nice not to have to worry about getting the nursery set up when I am so consumed with work.

I have also started narrowing down which kind of stroller, car seat, high chair, etc. we would like. No one warns you about how confusing this all is! There are 500 different choices for each product - how do you know if you are making the right choice? Luckily, I have a few friends who are going through this with me, so they have been very helpful!

My hump, my hump, my lovely lady bump!

Since about week 11, my "baby bump" has been pretty noticeable - to me at least! I think it is one of the most exciting things about being pregnant. Seeing your body change and grow to make enough room for your baby is an incredible experience.

This Friday I have my 16 week checkup and we are also finding out if we are having a boy or girl!!! I am so excited, anxious and nervous that I can hardly stand it! I am so ready to start planning the nursery and stocking the closet with either cute girly dresses and headbands or baby polo shirts and plaid shorts. Is it crazy that I am already planning our baby's outfits?

Another exciting development is that I have been feeling a lot of little taps and movement over the past week. It is definitely making all of this seem a lot more real!

And Baby Makes Three!

  
Andy and I are so incredibly excited to announce that we are expecting a new addition to our family! Baby "L" will make his or her debut on March 9, 2012. The picture below is from our 12 week 4 day ultrasound. Baby measured right on track and we were able to hear a strong heartbeat of 154 bpm. We are so in love! 


I have been incredibly lucky over the past 12 weeks and have experienced no morning sickness! I was a little tired (and always hungry) in the very beginning, but now I feel pretty much back to my normal self. As of tomorrow, I will be in my second trimester - a milestone that I have been looking forward to very much!

Baby "L" has been through quite a lot already in a very short amount of time:

1. A vacation to Maine and the "Easternmost Point in the U.S.A"

2. A quick visit to Canada

3. A bachelorette party

3. A three-day work trip to D.C. which included visits to The White House and Capitol Building

3. A 10-day work trip to Baltimore

4. A 5.8 magnitude earthquake!!!

5. Hurricane Irene!!!

WOW! What a crazy 12 weeks!

I have tomorrow off from work, so I am looking forward to a very relaxing four-day Labor Day weekend.

My next routine check up is next Friday - Andy's birthday! I don't have an ultrasound, but we will get to hear baby's heartbeat on the doppler. We can't wait! Keep checking back because I will update this blog as often as I can so that I can share our incredible journey with all of you!

Sushi Bar

Andy and I had so much fun this past weekend! On Friday night we went to Sushi Jo and used our South Florida Dines coupon - a $40 gift certificate purchased for $20. Restaurant.com and southfloridadines.com are my go-to websites for restaurant coupons. We wind up saving a ton of money - especially with restaurant.com since they usually have 80% off promo codes that you can use at checkout.

Anyway, Sushi Jo was packed when we got there so we decided to sit up at the bar. It was fun watching all of the rolls being made right in front of us. We even got to meet "Jo" who was working behind the counter haha!

Lately...

Summer is definitely upon us here in South Florida! I've noticed less traffic on the roads, more humidity in the air and the smell of our neighbors grills fired up in the evenings...The only thing missing is the daily afternoon rain showers - which our grass desperately needs! When it's so beautiful outside and you work five minutes from the beach, it's torture to sit behind a desk and stare at a computer screen all day!

Luckily, Andy and I have a bunch of fun trips planned for this summer and a lot of great things to look forward to. Two of our friends are getting married - one in Charleston, SC and the other here in West Palm. We are taking our annual trip up to Jonesport, ME with Andy's family - which is always a highlight of the summer. How can you beat catching your own lobsters and picking your own blueberries to make homemade blueberry pie?? Here are some pictures of our last trip to Maine:



Well, I hope everyone has a wonderful, relaxing Memorial Day weekend. I know I will be soaking up every second in the sun that I can get!

Chicken & Goat Cheese Quesadilla Recipe From Women's Health Magazine


I made this last night for dinner and it was quick and delicious! My friend, Jaime, showed me the recipe from her Women's Health Magazine, and being the goat cheese-lover that I am, I had to try it. 

Ingredients     
  • 1 1/2 oz goat cheese, softened to room temperature
  • 2 tbsp shredded monterey jack cheese
  • 1/2 tsp virgin olive oil
  • 1/4 cup chopped vidalia onion
  • 1/2 cup frozen corn kernels, thawed
  • 1 pinch ground black pepper
  • 1/2 cup diced cooked skinless white-meat chicken
  • 1 tbsp chopped fresh cilantro
  • 4 six-inch corn tortillas
  • Nonstick cooking spray, preferably olive oil

Directions

1.
Combine cheeses in a small bowl. Set aside.
2.
Heat olive oil in a medium saute pan over medium-low heat. Add onion and saute for 2 minutes. Add corn and pepper; saute for 1 minute. Add chicken and saute for 1 minute. Remove from heat, then stir in cilantro.
3.
Divide cheese mixture and spread over 2 tortillas. Layer each tortilla with half the chicken mixture and top with remaining tortillas.
4.
Spray a large frying pan or griddle with cooking spray. Warm quesadillas over medium heat for 5 to 6 minutes, flipping halfway.

Orlando Getaway

This past weekend we went on a great mini-vacation to Orlando with Andy's family. The trip felt like it was much longer than two days - probably because we crammed so much into the time we were there! We went to two parks - Universal and Islands of Adventure, spent time by the pool at our beautiful hotel, the Royal Pacific, and ate at Emeril's restaurant in CityWalk.


This picture is in front of the new Rip Ride Rockit roller coaster in Universal. We loved that you got to select which song you wanted to listen to during the ride. I rocked out to a little Black Eyed Peas "Pump It." (LOL) The craziest part about the roller coaster was the beginning when you are lifted straight up in the air 17 stories high and then you zoom down into that first loop at 65 mph! Talk about an adrenaline rush!


The Wizarding World of Harry Potter at Islands of Adventure was really cool to see even though I am pretty anti-Harry Potter. :) The weather was absolutely perfect the entire time we were there!


On Saturday night before dinner, we spent some time relaxing in the pool. We were able to watch the Kentucky Derby at the tiki bar and also saw the torch lighting ceremony that the hotel puts on complete with fire throwers and hula dancers.


Later that night, we had a fabulous dinner at Emeril's in CityWalk. I was very impressed with the food and recommend this restaurant to anyone visiting Orlando! I wanted to try one of their signature New Orleans dishes and decided on the andouille-crusted redfish. It was delicious! I forgot to snap a picture of mine, but here is one that I found online...


We had such a great weekend!

My Best Friend's Cupcakes

My best friend, Cara, who lives in Denver, has a blog called Cara's Cupcakes where she shares all of the amazing goodies that she makes. I am always so impressed with her baking skills! If you ever need a cute idea for a holiday party, look no further - she has all of the important occasions covered.


I can't wait to try some of her recipes out - Andy has his heart set on me making her spaghetti and meatball pie!

Recipe: Spicy Sausage and Broccoli Caprese Pizza

Homemade pizza is probably one of my favorite dinners, and once you master the basic technique, they are so simple to make! You can pick whatever toppings you like, whether they be caramelized onions, sauteed mushrooms, goat cheese, sausage, fresh mozzarella or sliced pears, the possibilities are endless. I prefer to buy the raw dough from either a local pizzeria (just call and ask for them to sell you an uncooked, rolled out pizza dough) or the bakery at Publix (these you have to roll out yourself). This is the perfect dinner to make with your husband or boyfriend too! Here is what you need to get started:

pictured: pizza dough, extra virgin olive oil, hot sausage, fresh mozzarella, locatelli cheese, steam-in-the-bag broccoli
not pictured: fresh basil, red pepper flakes, roma tomatoes, flour


Preheat your oven the 450 degrees. Flour your workspace and then add the dough on top...


In the meantime, brown your sausage - or have your husband do it :)


Back to the dough - use your fingers to kneed the dough and press outwards while spinning it in circles. Once your dough is shaped the way you want, place it on the pan that you are going to cook it on...


Drizzle a small amount of olive oil over the dough and spread with your fingers. Now your dough is ready for its toppings! For the Spicy Sausage and Broccoli Caprese Pizza, you will need to add sliced roma tomatoes, sliced fresh mozzarella, steamed broccoli, crumbled hot sausage (pre-cooked), fresh basil, red pepper flakes and locatelli cheese. It will look something like this...


Once you're at this step, I add a little extra olive oil over the top and on the crust so it will get nice and brown.

You can never have too much help in the kitchen!


Bake your pizza for 10-15 minutes until the cheese is bubbling and the crust is golden brown. You may need to put it under the broiler for a minute to get this way...


Use a pizza wheel to cut the pizza into eight slices. Now it's time to dig in! I promise you...this is amazing!!!
